Superfood Grilled Cheese Sandwich

This evening for dinner I had an extreme craving for grilled cheese… but being on a bit of a  health kick I decided to be a little spontaneous and make something a little different: A “Superfood” Grilled Cheese sandwich.

Below are the ingredients I used:

  • Whole Grain Bread (you can use whichever bread you want to really… I just prefer whole grain)
  • Butter
  • Mozzarella Kraft Singles cheese (You can use whichever cheese you would like)
  • Mrs. Dash
  • 1 Whole avocado
  • Kale
  • Mango

I used one leaf from my Kale bunch

Remove the seed of the avocado and start mashing it with a fork… the consistency you want the avocado to be is up to you… I liked that there were little chunks in it.

I am going to be completely honest, I actually used 3 slices of cheese, but BELIEVE me.. two is enough.. 3 makes it really gooey (still good).. but extremely gooooey!

There are several different types of mangoes, I don’t think it would matter what kind you used… (It looks like I took a giant bite of the mango but I actually took this picture of it after I started cutting it… terribly I might add). The amount of mango you use is up to you, I cut about 2/5 of the mango and julienne’d the slices.

Just a dash of Mrs. Dash is needed 🙂

I started off by buttering the exterior slices of bread, then added the mango, crushed avocado, Mrs. Dash, Kale and then the slices of mozzarella. I cooked the sandwich on medium for a couple minutes until both sides of the bread were toasted nicely.

and…… VOILA! A “healthy” take on the average Grilled Cheese Sandwich! The mango added a refreshing sweetness to the sandwich.. and although unusual to put on one, it was definitely necessary!

My Green-ish Smoothie

Every morning when I wake up I make a green smoothie for myself as part of my breakfast. I am obsessed with smoothies, especially ones that are healthy because they are so good for you and they actually taste really good. They are a great addition to a breakfast or a lunch and you get a lot of nutrients from them. Today I am going to share with you the recipe that I use every day!

What you’ll need:

  1. A magic bullet (of course you can use any type of blender)
  2. 1 banana
  3. About half a cup of unsweetened organic coconut milk
  4. A handful of spinach (kale works too)
  5. 2 tablespoons of chia seeds
  6. A cup of vanilla greek yogurt – Protein powder works as well!
  7. A handful of frozen berries
  8. Fill the rest with water

Now seriously, I don’t think it really matters how you put these ingredients in a blender. However, I do find that everything blends better when you put the greens and berries closer to the blade.

Now I realize the smoothie doesn’t look green right off the bat because the berries and the yogurt make it a light pink color, but as you start drinking it you’ll notice that the color starts to change… very slowly. So yes, it is green! Just doesn’t look so green at first 🙂

Here are the benefits of the ingredients in my smoothie:

  1. Banana – potassium, cholesterol free, vitamin C, vitamin B-6, manganese, fiber, easy to digest
  2. Unsweetened Organic Coconut Milk – Low calories, helps fight infection, rich in fibre, contains several vitamins, promotes weight loss, benefits immune system, promotes healthy hair and skin
  3. Spinach – Antioxidants, good for your heart, gastrointestinal health, anti-inflammatory properties, great source of iron, good for your brain
  4. Chia Seeds – Omega 3’s, fiber, antioxidants, minerals, gluten-free, regulates blood sugar, combats diabetes, stronger teeth and bones, phosphorus, good source of protein, fights belly fat, makes you feel full faster, and improves heart health
  5. Greek Yogurt – Excellent source of protein, easy to digest, low in carbohydrates, probiotics, promotes weight management, lowers blood pressure
  6. Frozen Berries – Dietary antioxidants, vitamin C, naturally sweet

As you can see, the smoothie did change color a bit, right now it’s in the ugly pink-gray transition. Anyways, I hope you found this post a little helpful and useful! Enjoy!
